This Superfood Granola Bars recipe is easy to prepare, delivering delicious treats that perfect for slicing into grab-and-go bars.

They’re ideal for lunchboxes, snacks, or a quick bite when you need something satisfying making them as practical as they are delicious!

Ingredients

  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1¼ cups rolled oats
  • ¼ cup oat flour or coconut flour
  • ½ cup pumpkin seeds
  • ½ tsp ground cinnamon 
  • Pinch of salt
  • ½ cup dried cranberries 
  • ¼ cup nut butter of choice
  • ¼ cup honey 
  • Melted chocolate (to decorate)

Ground cinnamon is a potent source of health-promoting compounds. It is rich in polyphenols, which are powerful antioxidants that protect cells from oxidative damage and reduce systemic inflammation. One of cinnamon’s most notable metabolic benefits is its ability to improve insulin sensitivity, aiding in more efficient blood glucose management. Additionally, cinnamon contains cinnamaldehyde, an active compound that exhibits natural antimicrobial properties.

How to make them

  1. In a bowl, mix the ground flax seeds with the water and set aside briefly until slightly thickened.
  2. Add the nut butter and honey to the flax mixture and stir well. Add the oats, flour, pumpkin seeds, cinnamon, salt, and dried fruit. Mix until everything is evenly coated.
  3.  Scoop the mixture into a parchment-lined square tin or banana bread tin. Press down firmly and bake at 180°C (350°F) for 10 minutes.
  4. Allow the bars to cool completely, then chill briefly before slicing into fingers or squares.
  5. Drizzle with melted chocolate, let it set, and store in the fridge or an airtight container for 3–5 days, depending on the weather.
