This creamy chicken peri-peri pasta recipe is a lighter, flavour-packed comfort meal that brings together tender grilled chicken, vibrant vegetables, and a spicy, tangy sauce.

It is quick enough for a weeknight dinner but satisfying enough to feel like a treat, with a balance of protein, colour, and creaminess in every bite.

Ingredients

  • Grilled chicken breast, cut into strips
  • Cooked pasta of your choice
  • Chopped onion
  • Fresh garlic
  • Chopped mushrooms (optional)
  • Chopped cherry tomatoes
  • Baby spinach
  • Reduced-fat coconut milk
  • Nando’s Perinaise Lite
  • Low-fat cream cheese (optional)
  • Salt, pepper, and seasonings of your choice
  • Olive oil

Chicken breast adds lean protein to help keep you fuller for longer, while baby spinach, cherry tomatoes, onions, garlic, and mushrooms bring fibre, antioxidants, and key micronutrients. Reduced-fat coconut milk, lite perinaise, and optional low-fat cream cheese keep the sauce creamy while helping lighten the overall dish.

Instructions

  1. Cook your chicken and pasta as needed, then set aside.
  2. In a pan, sauté onion and garlic in a little olive oil until soft and fragrant.
  3. Add the cooked chicken and coconut milk to the pan, stirring well to combine.
  4. Mix in the cherry tomatoes, spinach, mushrooms (if using), and seasonings.
  5. Allow everything to simmer until the veggies are cooked through.
  6. Stir in the perinaise and, if you like, a spoon of cream cheese for extra creaminess.
  7. Add your pasta, toss well to coat, and enjoy!
