This creamy chicken peri-peri pasta recipe is a lighter, flavour-packed comfort meal that brings together tender grilled chicken, vibrant vegetables, and a spicy, tangy sauce.
It is quick enough for a weeknight dinner but satisfying enough to feel like a treat, with a balance of protein, colour, and creaminess in every bite.
Ingredients
- Grilled chicken breast, cut into strips
- Cooked pasta of your choice
- Chopped onion
- Fresh garlic
- Chopped mushrooms (optional)
- Chopped cherry tomatoes
- Baby spinach
- Reduced-fat coconut milk
- Nando’s Perinaise Lite
- Low-fat cream cheese (optional)
- Salt, pepper, and seasonings of your choice
- Olive oil
Chicken breast adds lean protein to help keep you fuller for longer, while baby spinach, cherry tomatoes, onions, garlic, and mushrooms bring fibre, antioxidants, and key micronutrients. Reduced-fat coconut milk, lite perinaise, and optional low-fat cream cheese keep the sauce creamy while helping lighten the overall dish.
Instructions
- Cook your chicken and pasta as needed, then set aside.
- In a pan, sauté onion and garlic in a little olive oil until soft and fragrant.
- Add the cooked chicken and coconut milk to the pan, stirring well to combine.
- Mix in the cherry tomatoes, spinach, mushrooms (if using), and seasonings.
- Allow everything to simmer until the veggies are cooked through.
