If you’re looking for a protein-packed snack that tastes like a dessert, these No-Bake Rice Bars are the perfect solution.

Featuring a rich chocolate rice porridge base, a creamy date caramel layer, and a chocolate topping, they’re ideal for pre- or post-workout fuel, afternoon snacking, or satisfying a sweet craving.

Ingredients for the base

  • 2 cups brown dates
  • ⅓ cup nut butter
  • Pinch of salt
  • Melted chocolate

Instructions 

  1. Soak the dates in hot water until softened. Drain and blend with the nut butter and salt until smooth, adding a little water or milk if needed.
  2. In a mixing bowl, combine the rice porridge, protein powder, milk, nut butter, flax seeds, and salt. Stir until smooth, adding extra milk if required.
  3. Press the mixture into a lined square baking tin or loaf tin.
  4. Spread the date caramel evenly over the base and freeze until firm.
  5. Drizzle with melted chocolate.
  6. Freeze again until set.
  7. Slice into bars and enjoy as a pre- or post-workout snack.
