By using a specific protein blend and a classic French baking technique, this Fluffy Protein Mug Soufflé recipe hijacks the microwave to create a light, airy, pillowy soufflé that rises beautifully and melts in your mouth.
Ingredients
- 1 scoop Biogen Complete Whey, Chocolate flavour
- 1 tbsp unsweetened cocoa powder
- 1-2 tbsp granulated sweetener of choice (erythritol or stevia)
- ¼ tsp baking powder
- 3-4 tbsp unsweetened almond milk (or any milk of choice)
- 1 large egg white
- A few dark chocolate chips or a pinch of sea salt for the top
Biogen Complete Whey is a delicious, high protein shake that contains a precise blend of high biological value, fast and slower digesting proteins. The ideal ratio of whey, casein, milk protein concentrate, and plant proteins, in this product provides a timed-release formulation with a superior amino acid profile that allows for optimum nitrogen retention.
Instructions
- In a small bowl, whisk together the protein powder, cocoa powder, sweetener, and baking powder. Add the milk one tablespoon at a time, stirring until a thick, smooth paste forms. It should look like a thick frosting. If it’s too dry, add a tiny splash more milk, but don’t let it get runny!
- In a separate, completely clean bowl, whip your egg white using a hand mixer (or a lot of forearm endurance and a whisk) until stiff peaks form. You should be able to turn the bowl upside down without the egg white moving.
- Add about a third of your whipped egg white into the chocolate protein paste and stir it in to loosen the mixture. Then, add the remaining egg whites. Using a spatula, gently fold the whites into the batter. Think “under and over” – do not stir aggressively, or you will deflate all that gorgeous air.
- Grease a standard microwave-safe mug or a large ramekin with a little cooking spray. Gently spoon the batter into the mug.
- Microwave on high for 45 to 60 seconds. Watch it closely! The soufflé will rise dramatically above the rim of the mug. It is done when the top looks set but still has a slight, delicate jiggle in the centre.
- Eat It Immediately: Just like a traditional oven-baked soufflé, this microwave version will deflate slightly as it cools. Grab a spoon and dive in right away while it’s hot and fluffy.
