Warm, spiced, and naturally sweet, this banana bread recipe is a comforting twist on a classic loaf.
It is perfect for breakfast, a pre-workout pick-me-up, or on-the-go snack.
Ingredients
- 2 medium ripe bananas, mashed
- ½ cup milk
- ¼ cup coconut oil
- 1 tsp vanilla extract
- ⅓ cup mashed plums
- ⅓ cup coconut sugar
- 1⅔ cups spelt flour
- 1–2 scoops Biogen Complete Whey protein powder, Salted Caramel flavour
- 1 tsp baking powder
- Pinch of salt
- Dash of cinnamon
- Dash of nutmeg

Method
- In a bowl, mash the bananas. Add the milk, coconut oil, vanilla extract, coconut sugar, and mashed plums. Mix until well combined.
- Fold in the spelt flour, protein powder, baking powder, cinnamon, nutmeg, and salt. Mix until just combined.
- Pour the batter into a greased or parchment-lined loaf tin. Bake at 180°C for 30–40 minutes, or until golden and cooked through.
- Allow the loaf to cool before slicing. Serve with granola crumbs and a drizzle of icing sugar frosting if desired.
