[RECIPE] Spicy Black Bean & Quinoa Protein Bowls with Avocado Crema

Dive into a vibrant bowl of culinary delight where wholesome meets bold flavour in this Spicy Black Bean & Quinoa Protein Bowls recipe.

Every bowl is a symphony of textures and tastes designed to nourish your body and tantalise your taste buds.

Ingredients for the bowls:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ teaspoon smoked paprika
  • Salt and pepper to taste

Ingredients for the avocado crema:

  • 1 ripe avocado
  • ¼ cup Greek yoghurt
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • Pinch of cilantro, chopped
  • Salt and pepper to taste

Optional toppings

  • Fresh cilantro
  • Lime wedges
  • Hot sauce

Black beans are an excellent source of plant-based protein and fibre, promoting satiety and aiding in digestive health. Rich in complex carbohydrates, they provide sustained energy without causing rapid spikes in blood sugar. Black beans are also packed with essential vitamins and minerals, including folate, iron, magnesium, and potassium.

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  2. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the red onion and bell pepper, and sauté for 5-7 minutes, or until softened.
  3. Add the black beans, chili powder, cumin, and smoked paprika. Season with salt and pepper to taste. Cook for another 2-3 minutes, stirring occasionally.
  4. In a food processor or blender, combine the avocado, yoghurt, lime juice, garlic, and cilantro. Blend until smooth and creamy. Season with salt and pepper to taste.
  5. Divide the cooked quinoa between two bowls. Top with the black bean and vegetable mixture, and a generous dollop of avocado crema.
  6. Garnish with fresh cilantro, lime wedges, and hot sauce, if desired.
